Yes, that means you’ve put up with me thinking I’m brilliant and funny for 100 posts!
So, today, we’re gonna count 100 Cheerios, M&Ms, and chocolate chips, like they do at elementary schools on the 100th day of school. 1, 2, 3, 4, 5…..okay no we’re not. I ate all of them all.
But, here’s something I didn’t eat. Yet.
Here is the “recipe” for my favorite cupcakes EVER, Black Bottom Cupcakes.I am sure I can trust you with this. In weak hands, this recipe may lead to uncontrollable weight gain and marital unhappiness. How? Well, you’ll see. But don’t say that I didn’t warn you when you start eating these 5 times a day and growling at your spouse to stay away from YOUR cupcakes, the grubby cupcake-stealing jerk.
You can use your favorite chocolate cake recipe (I love Joy of Cooking’s Devil’s Food), or cheat, and use a boxed cake mix.

Black-Bottomed Cupcakes:
Makes 24 cupcakes
Preheat your oven to 350.
Blend together and set aside:
12oz softened cream cheese (low-fat’s fine)
1/3C sugar
1 egg
Prepare your boxed cake mix, or chocolate cake recipe, per their instructions, not mine.
Fill your cupcake papers 1/2 way with the batter. Then, put a big fat spoonful of the cream cheese mixture on top of that. Let it stay on the top, and no, it doesn’t have to be perfect. Lastly, take a teaspoon of semi-sweet chocolate chips (per cupcake) and sprinkle them on top of the cream cheese.
Bake in the bottom 1/3rd of the oven for 20 minutes. Let them cool til the chocolate is set again. Store them in the fridge due to the cream cheese.
Now, you can frost these, with a little bit of cream cheese frosting, but if you put too much on, this cupcake will be lethally sweet. A little bit of frosting keeps the chocolate and cream cheese layers a secret, which is a nice surprise. Or you can leave them plain, or dress them up with a bit of powdered sugar.

OMG these sound yummy! We would all go crazy for these around here, especially Hubby since his favorite dessert is chocolate cake with cream cheese icing.

Sorry about the diet-ruining! Diets should be like work weeks, you get up early all week, then sleep in on the weekend. When I’m president, I will make it so.
